Soy Crema
Method
Build cold brew, sparkling water, yuzu and simple syrup over ice. Combine the soy and maple into the N₂O gun, charge, give it a light shake, and float the cream gently over the top. It should sit like fresh snow on the mountain.
We like the immersion method for cold brew, but you can use iced espresso or Cold Drip. Try finishing with zest of various citrus for an extra pop!

Add strawberries and pack your glass with ice. Whisk the matcha with hot water separately until smooth. Pour in the sparkling water and gently pour the matcha down the side to layer it through. Finish with a slow pour of soy for contrast.
You can use frozen or fresh berries instead of syrup.

Into your glass, add ice, cold brew and coconut water. Layer in Happy Happy Oat Oat Oat to create a marbled effect.
Try using a spoon to slow the flow and get that visual contrast.

Biscuit Whip
Method
Combine Biscuit Whip ingredients and set aside to steep for 10 mins. Add the tea and Happy happy Soy Boy to an iced glass. Fine strain your Cloud mixture and load into Cream Charger, charge with 1 bulb. Top your iced Earl Grey with the fresh Biscuit Whip and enjoy!
Try it with your favourite biscuit!

Optional Sesame Cream (N₂O, Stabilised)
Method
Stir the black sesame paste & maple syrup directly into your espresso.
Going hot? Steam your soy and pour it straight through.
Going iced? Load up the glass first, then pour the cold soy over.
If you're doing the sesame cream, blend the soy, sesame syrup, maple and xanthan until completely smooth, charge it up in the N₂O gun and float it over the top - It’s optional, but it really isn’t.

Lemon Cloud
Method
Blend cloud ingredients until smooth, strain and add into an N₂O gun and charge once. In your drinking glass, combine strawberry purée, ice and soy. In a seperate glass, whisk matcha and water together for 2 minutes. Layer matcha on top (try using a spoon as support).
Gently dispense Lemon Myrtle Cloud on top.
You can use frozen berries too!

Oat Blend
Method
Fill your glass with ice, then add the banana syrup, cinnamon, vanilla and oat milk. Pull a double shot and pour it straight over the top. Charge the oat and brown sugar mix in the N₂O gun and dispense it over the drink — it should sit like a soft, billowy cloud. Don't rush that last step.

Miso Foam
Method
Blend soy, miso, maple & xanthan gum until completely smooth. Strain and transfer mixture into a cream charger and charge with 1 canister.
In your drinking glass add cold brew to ice & dispense cloud on top.
